Can I scale all ingredients proportionally?

Most ingredients scale proportionally, but baking is trickier. Leavening agents (baking powder, yeast), salt, and spices do not always scale linearly - use 75% of the calculated amount and adjust to taste.

Oven temperature generally stays the same when scaling a recipe. Baking time may increase slightly for larger batches or pans, but this is best determined by checking for doneness.
